Cheese caves!

The U.S. is storing around 1.4 billion pounds of cheese underground in massive refrigerated facilities known as the “Cheese Caves.” The most famous of these is located in Springfield, Missouri, inside a vast underground limestone mine called Springfield Underground. The cheese is stored there as part of a government program meant to stabilize dairy prices by purchasing surplus production from farmers. Deep underground, the constant cool temperatures make it an ideal place to preserve cheese for long periods. Hidden beneath Missouri’s surface, this site holds one of the largest cheese stockpiles in the world.
